Made the most DELICIOUS stuffed pepper soup today using home grown bell peppers from my grow tower, celery, onions, rice, tomatoes, garlic, beef and spices. This is definitely one of the tastiest meals I’ve ever made, and I made lots too so we’ll be eating this over the next week.

I gained a pound today but I blame it on breaking my intermitted fasting yesterday and eating a hearty breakfast before work. I don’t like doing my intermitted fasting on days I have to work because if I’m doing something strenuous and I get hungry, I get weak and shaky so it just doesn’t feel practical to do on those days. Though, I could definitely do with a much lighter breakfast. I’ll do that next time and hopefully will continue my weight loss. Over the past two weeks my weight has fluxuated a bit. I’ve dropped about 8lbs since the new year – now 7 because of the one lb I gained. I’ve had a few weak moments which has slowed my progress, but I’m trying not to get discouraged over it because 8 or even 7lbs in two weeks is really good. I’d love to lose 15lbs this month though, and try to keep that as my monthly goal. If I can keep it up and stay disciplined, I can achieve my goal weight by summer – and I’ll be really healthy because I’ve been eating really good things and drinking tons of water and tea.

A few reasons why I want to lose weight is I miss my old body. I felt a lot more confident, I noticed people treated me better and were nicer, I felt pretty. I also had more energy and was more active in general, and had more sense of routine in my life. Overall, I just felt better. I also feel like if I can achieve such a massive change in my life that I’ve struggled so much with over the years, that I can achieve other things that are really hard too. And lastly, I want to lose weight before I have a baby. I’m not pregnant yet but I’m getting to be that age where it’s gotta be soon if I’m going to because the clock is ticking. It’s easier to get pregnant if you aren’t overweight, and I think if I could lose a lot of weight before I get pregnant, it’d be a lot easier to get into that mindset to be able to get the weight off again after. So there are a lot of reasons why this goal is really important to me and I feel really determined to achieve it this year. And once I get it off I think it’ll be a lot easier to keep it off. This lifestyle change is also forcing me to cook a lot more home made meals, which is another plus. Before I usually just opted for food that was quick, easy, and often really unhealthy. No more of that!
